- Lampante Virgin Olive Oil: This oil is not fit for human consumption. It has a free acidity content of more than 3.3 grams per 100 grams. It is used for refining and technical purposes.
- Refined Olive Oil: It is the refined form of virgin olive oil. It has a free acidity content of not more than 0.3 grams per 100 grams.
- Olive Oil: This is a blend of refined and edible virgin olive oil. It has a fatty acid content of not more than 1 gram per 100 grams.
The USDA grades olive oil in the following four categories:
- US Grade A or US Fancy- entirely free from defects, good typical olive oil odor, good typical flavor
- US Grade B or US Choice- reasonably free from defects, reasonably typical olive oil odor, reasonably good flavor
- US Grade C or US Standard-fairly free from defects, fairly good typical olive oil odor, fairly good typical flavor
- US Grade D or Substandard- higher amounts of defects, fails to have fairly typical olive oil odor and flavor
Choose oil sold in dark glass bottles or metal tins. also strongly warns against purchasing olive oil in plastic bottles because plastic is porous and will expose the oil to more light and air, which can cause it to go bad. extra-virgin olive oils are legally required to have a free oleic acid content of less than 0.8 percent. A higher acid content will negatively impact both flavor and shelf life. Lower quality oils include virgin olive oil, which has a free oleic acid content between 0.8 and 2.0 percent, and pure olive oil, which has one between 2.0 and 3.3 percent. (Anything with a higher free oleic acid content is considered lampante oil, which is deemed unfit for human consumption.)
