Olive oil is adversely affected by several factors including time passed since its pressing, heat, light, and air. olive oil is at its best in its first two years. An older bottle probably won’t hurt you, but it slowly loses its beautiful flavors and health benefits over time. olive oil harvests in the northern hemisphere (usually in countries like Greece, Spain, and Italy) take place in October and November. This means if you’re looking for the freshest bottle, you’ll want the harvest date listed on the label to be from the previous year. Anything earlier than that indicates an old bottle—unlike wine, olive oil doesn’t get better with age.

Pure olive oils, on the other hand, have been chemically processed which means you may want to avoid them altogether. When you see a bottle labeled pure, light, or olive oil, this can be an indicator that it is a refined, lesser quality product.

A 2011 UC Davis report found that three out of four bottles from the five top-selling imported olive oil brands were fraudulently labeled extra-virgin. Coleman says the best way to be sure you’re not buying a phony bottle is to check the label for a couple of things.

Check for the region the oil was produced in. If you see more than one country, region, or even city listed, put the bottle back on the store shelf. “You don’t want the olives blended from all different countries,” Coleman explains. Because when it comes to the olives used in olive oil, he says the things that grow together go together.

You also want to look for the olive cultivar. This is just a fancy way of saying which type of olives were used to make the oil. The more specific information the producers display on the bottle, the more likely that extra-virgin claim is legit.

There are several grades of olive oil, according to the flavor, aroma, acidic value, and color. Make sure you buy authentic oil with proper evaluation for cooking or medicinal purposes. There are laws in Europe monitoring the use of an “extra-virgin” label, but the United States doesn’t have strict regulations.

  • Virgin Olive Oil: It is prepared by mechanical and physical means. There is no alteration to the oil after processing. Edible virgin oil has a free acidity of not more than 2 grams per 100 grams. No food additives are permitted in this oil.
  • Extra Virgin Olive Oil: This is a type of edible oil, which has a free acidity content of no more than 0.8 grams per 100 grams. No additives are permitted in this oil.
  • Virgin Olive Oil: This has a free acidity content of no more than 3.3 grams per 100 grams. This oil does not contain any additives.
  • Lampante Virgin Olive Oil: This oil is not fit for human consumption. It has a free acidity content of more than 3.3 grams per 100 grams. It is used for refining and technical purposes.
  • Refined Olive Oil: It is the refined form of virgin olive oil. It has a free acidity content of not more than 0.3 grams per 100 grams.
  • Olive Oil: This is a blend of refined and edible virgin olive oil. It has a fatty acid content of not more than 1 gram per 100 grams.

The USDA grades olive oil in the following four categories:

  • US Grade A or US Fancy- entirely free from defects, good typical olive oil odor, good typical flavor
  • US Grade B or US Choice- reasonably free from defects, reasonably typical olive oil odor, reasonably good flavor
  • US Grade C or US Standard-fairly free from defects, fairly good typical olive oil odor, fairly good typical flavor
  • US Grade D or Substandard- higher amounts of defects, fails to have fairly typical olive oil odor and flavor

Choose oil sold in dark glass bottles or metal tins. also strongly warns against purchasing olive oil in plastic bottles because plastic is porous and will expose the oil to more light and air, which can cause it to go bad. extra-virgin olive oils are legally required to have a free oleic acid content of less than 0.8 percent. A higher acid content will negatively impact both flavor and shelf life. Lower quality oils include virgin olive oil, which has a free oleic acid content between 0.8 and 2.0 percent, and pure olive oil, which has one between 2.0 and 3.3 percent. (Anything with a higher free oleic acid content is considered lampante oil, which is deemed unfit for human consumption.)
